Highest cinnamon grade

Alba is rolled from the youngest, innermost layer of the cinnamon bark — only the most skilled peelers produce it. The quills are paper-thin (under 1 mm), tightly wound, and carry the most delicate flavour of all Ceylon grades.

True Ceylon — not cassia

Cinnamomum verum (syn. zeylanicum) is the only true Ceylon cinnamon. Cassia is a different species entirely — harder in texture and far higher in coumarin, a compound that stresses the liver at regular doses.

Less coumarin than cassia

Safe for daily use — confirmed by German food safety authority (BfR, 2006)

Ceylon cinnamon contains approximately 0.004% coumarin. Cassia contains around 5% — roughly 1,200 times more. In 2006, the German Federal Institute for Risk Assessment (BfR) warned against regular cassia consumption due to its coumarin content. Ceylon cinnamon has never triggered such a warning and remains well within the safe daily intake (TDI) even at typical culinary doses.

💡 Tip: Alba sticks are soft enough to grind in a standard spice grinder — unlike cassia, they won't damage your blades. After infusing, dry the stick completely and store in an airtight jar for 2–3 more uses.

Ceylon cinnamon is graded by quill diameter and bark thickness. The grading standard is set by the Sri Lanka Standards Institution (SLSI). Alba is the smallest diameter and thinnest bark — the premium end of the spectrum.
